Vegan cookies with orange and chocolate
Ingredients for approx. 50 cookies
For the cookies:
- 250 g margarine
- 150 g powdered sugar
- 1 sachet (1.5 tsp) vanilla sugar
- 1 orange (zest)
- 4 tbsp applesauce
- juice of half an orange (approx. 3-4 tbsp)
- 300 g spelt flour (type 630)
- 1 pinch of salt
For decorating:
- 200g dark chocolate
- sea salt
Preparation:
- To prepare, wash the orange thoroughly and grate the zest. Set aside in a small bowl.
- Cream the vegan butter or margarine in a large bowl. Then finely sieve the powdered sugar and gradually add to the bowl. Add the vanilla sugar to the mixture and continue to beat until fluffy.
- Add the orange zest to the bowl along with the juice of half an orange and the apple sauce. Mix all the ingredients together well. Then sift the flour into the bowl and slowly stir into the batter. Finally, add a pinch of salt to the batter and mix everything well again before placing the batter in the fridge for at least 30 minutes.
- Once the dough has firmed up a little in the fridge so that it is easier to form small balls, you can continue. Preheat the oven to 180 °C (fan oven). Take small amounts of dough in your hands and shape them into small, round balls. Place them on a baking tray lined with baking paper with a little space between them. Tip: You can moisten your hands slightly so that the dough doesn’t stick to your fingers so easily. Bake the cookies for
- approx. 20-25 minutes until they are lightly browned. Then remove the cookies from the oven and leave to cool.
Once the cookies have cooled, melt the dark chocolate and gradually dip half of the cookies into the chocolate. Finally, sprinkle coarse sea salt over the chocolatey half of the vegan cookies – and you’re done!
Baking vegan cookies made easy
Baking vegan doesn’t have to be complicated. Did you know, for example, that you can easily replace eggs with a spoonful of apple sauce or half a mashed banana? Applesauce is often the more neutral choice here, as bananas impart a stronger flavor to cookies and cakes. You can also replace milk 1:1 with a plant-based alternative. A little tip: if the milk alternative already has a sweet taste, you can reduce the amount of sugar in your recipe – this way your vegan cookies and cakes won’t be too sweet.
